Mexico is a country full of rural live and agricultural heritage. In the state of Oaxaca, coffee is widely grown under shade trees that share a symbiotic relationship with native flora and fauna. This blend comes from Ixtlán de Juárez, a municipality in the state of Oaxaca. This blend was grown and harvested by farmers in the township of Santo Domingo Cacalotepec within the Sierra Norte, the tallest peak within the state. Standing at 12 miles from the urban center, the producers often take their coffee to the town’s plaza looking to sell their parchment.
The varieties that make up this blend are Typica, Mundo Novo and Catimor. The farms of the producers that grew these coffees sit at an altitudinal range of 1,350 to 1,450 m.a.s.l. This washed coffee was hand selected from the tree at its peak ripeness, de-pulped and set to ferment for a period of 16 hours. The beans are then washed with clean water and are put out on patios where they will dry for period of 6 days. The collaborative effort of the seven producers involved in this blend is showcased in cup with notes of cinnamon, chocolate and lemon.
