Gamaliel Ríos Ortíz, Mexico (MIGRANT JUSTICE FUNDRAISER) - Honey Process Peñasco
We are proud to partner with the Green Mountain Bhoys (Vermont Green Supporter Group) to bring you this special coffee release. With artwork by Tyler Littwin of Blake Ink, the bag features a design inspired by the powerful slogan: “Hate does not grow well in the rocky soil of Vermont.” First displayed at an anti-KKK rally in Wilmington, VT, in 1982, the message remains just as vital today.
Proceeds from this coffee will support Migrant Justice Vermont, an organization dedicated to advancing human rights and economic justice for farmworkers in our state. Together, we stand united in the belief that there is no place for hatred in Vermont. Enjoy an incredible cup of coffee while helping to cultivate a more just and welcoming community for all.

Grown by third-generation coffee producer Gamaliel Rios Ortiz in the lush landscapes of the Sierra Madre in Chiapas, Mexico, this exceptional coffee embodies a legacy of craftsmanship and dedication. Gamaliel’s farm, Castaño, is nestled between 1,400–1,700 meters above sea level in the township of Plan de la Libertad Alta, where the high altitudes and fertile soils produce vibrant and complex coffees.
This lot showcases the Peñasco variety and features a meticulous honey process. After hand-selecting ripe cherries, Gamaliel de-pulped the fruit, leaving the sticky mucilage intact for a controlled fermentation of 120 hours. The coffee was then carefully dried on raised beds for 18 days, allowing the beans to develop their nuanced flavor profile.
Expect a cup that’s as expressive as the Sierra Madre itself, with layers of sweetness, a velvety texture, and the unmistakable care of generations of expertise.
